Italian corn crusted baked fish

| 2 | tablespoons | Minced garlic |
| ¼ | cup | Olive oil |
| 1 | tablespoon | Thyme or oregano |
| 1 | pounds | Haddock, sole or cod |
| Grated Parmesan cheese | ||
| ½ | cup | Yellow cornmeal mixed with |
| Salt & pepper (1/2 tsp. ea) | ||
Directions
Mix tomatoes, garlic, oil & thyme in bottom of baking dish. Dip fish in cornmeal & place in dish. Bake at 450 for 20-26 minutes. Top with cheese.
