Italian corn crusted baked fish

Yield: 1 Servings

Measure Ingredient
2 cups Chopped tomatoes
2 tablespoons Minced garlic
¼ cup Olive oil
1 tablespoon Thyme or oregano
1 pounds Haddock, sole or cod
\N \N Grated Parmesan cheese
½ cup Yellow cornmeal mixed with
\N \N Salt & pepper (1/2 tsp. ea)

Mix tomatoes, garlic, oil & thyme in bottom of baking dish. Dip fish in cornmeal & place in dish. Bake at 450 for 20-26 minutes. Top with cheese.
