Indian pumpkin soup

Ingredients

2½ | cup | Mashed cooked pumpkin |
3 | cups | Water (approximately) |
1 | tablespoon | Chopped onion |
1 | tablespoon | Shortening |
dash | Salt | |
1 | cup | Milk or light cream |
1 | tablespoon | Curry powder or to taste |
dash | Fresh or dried mint |
Directions
Saute onion until transparent.
Combine pumpkin and water, stir to form thin puree. Add onion. Boil for three minutes. Add milk or cream, salt to taste and curry powder. Heat through, stirring constantly.
Sprinkle mint over the top before serving if desired.
