Indian pumpkin soup

Yield: 6 servings

Measure Ingredient
2½ cup Mashed cooked pumpkin
3 cups Water (approximately)
1 tablespoon Chopped onion
1 tablespoon Shortening
\N dash Salt
1 cup Milk or light cream
1 tablespoon Curry powder or to taste
\N dash Fresh or dried mint

Saute onion until transparent.

Combine pumpkin and water, stir to form thin puree. Add onion. Boil for three minutes. Add milk or cream, salt to taste and curry powder. Heat through, stirring constantly.

Sprinkle mint over the top before serving if desired.
