Indian pumpkin soup

Ingredients

cupMashed cooked pumpkin
3cupsWater (approximately)
1tablespoonChopped onion
1tablespoonShortening
dashSalt
1cupMilk or light cream
1tablespoonCurry powder or to taste
dashFresh or dried mint

Directions

Saute onion until transparent.

Combine pumpkin and water, stir to form thin puree. Add onion. Boil for three minutes. Add milk or cream, salt to taste and curry powder. Heat through, stirring constantly.

Sprinkle mint over the top before serving if desired.
