Yield: 4 servings
|1 pounds||Cooked chicken, shredded|
|1||Leek, white part only, very thinly sliced|
|1 tablespoon||Minced fresh ginger OR-|
|½ teaspoon||Ground ginger|
|2 tablespoons||Soy sauce|
|2 tablespoons||Red wine vinegar|
|1 teaspoon||Crushed red pepper|
|1 tablespoon||Sesame seeds, toasted|
Combine chicken and cucumbers in serving dish. Sprinkle with leek pieces and ginger. Refrigerate until well chilled. Mix soy sauce, vinegar, sugar, red pepper and oil together, blending throoughly.
Stir in sesame seeds. Just before serving, toss chicken mixture with dressing.
