Hunan style chicken salad ^

Ingredients

1poundsCooked chicken, shredded
3Cucumbers, julienned
1Leek, white part only, very thinly sliced
1tablespoonMinced fresh ginger OR-
½teaspoonGround ginger
2tablespoonsSoy sauce
2tablespoonsRed wine vinegar
2tablespoonsSugar
1teaspoonCrushed red pepper
1tablespoonSesame seeds, toasted

Directions

Combine chicken and cucumbers in serving dish. Sprinkle with leek pieces and ginger. Refrigerate until well chilled. Mix soy sauce, vinegar, sugar, red pepper and oil together, blending throoughly.

Stir in sesame seeds. Just before serving, toss chicken mixture with dressing.
