Hunan style chicken salad ^

Yield: 4 servings

Measure Ingredient
1 pounds Cooked chicken, shredded
3 Cucumbers, julienned
1 Leek, white part only, very thinly sliced
1 tablespoon Minced fresh ginger OR-
½ teaspoon Ground ginger
2 tablespoons Soy sauce
2 tablespoons Red wine vinegar
2 tablespoons Sugar
1 teaspoon Crushed red pepper
1 tablespoon Sesame seeds, toasted

Combine chicken and cucumbers in serving dish. Sprinkle with leek pieces and ginger. Refrigerate until well chilled. Mix soy sauce, vinegar, sugar, red pepper and oil together, blending throoughly.

Stir in sesame seeds. Just before serving, toss chicken mixture with dressing.
