Rub chicken pieces with halved lemon. Sprinkle with 1 teaspoon ginger and salt to taste. Combine oil and honey with remaining ginger and brush the chicken with the mixture. Roast it in a pre-heated 350-F degree oven for 90-minutes, basting occasionally with honey mixture. Serve warm. Lovely with side dishes of rice and rosemary green beans.
