Hawaiian sweet bread (1 lb)

Measure Ingredient
⅔ cup Pineapple juice
½ \N Egg
3 tablespoons Milk
2½ tablespoon Butter or margarine
1 teaspoon Coconut or vanilla extract
1 pinch Ground ginger
⅓ teaspoon Salt
¼ cup Sugar
⅓ cup Potato flakes
2½ cup Bread flour
2 teaspoons Vital gluten; optional
1 teaspoon Rapid or quick yeast

One small can (6 oz.) of pineapple juice equals qpprox. ¾ cup. Orange juice may b esubstituted for a slightly different flavor. Use an egg yolk, white or 2 tablespoons egg substitute for the half egg. This can be a high rising bread.
