Haring salade (marinated herring salad)

Ingredients

1cupMarinated herring, drained
(jar approx 200g)
1cupPotatoes, diced, cooked
1cupBeets, diced, cooked
½cupDill pickles, chopped
1cupCream 35%
1tablespoonWhite vinegar
1teaspoonPrepared mustard
½smallSpanish onion, sliced
8Lettuce leaves
3Eggs, hard cooked, quartered
2Apples, chopped
½teaspoonDillweed
¼teaspoonSalt
¼teaspoonPepper

Directions

CREAM DRESSING

The Dutch love herring. You can add or delete ingredients freely in this salad.

In a large bowl, combine herring, potatoes, beets, apples, pickles and onion. Toss lightly with dressing. Arrange salad on individual lettuce lined plates. Garnish with eggs.

Dressing: In a small bowl, whisk together cream, vinegar, mustard, dill, salt and pepper. Makes about 1 cup.
