Hardy vegetable soup

Ingredients

2Garlic cloves, chopped
1cupCarrots, sliced
2cupsPotatoes, diced
2tablespoonsCanola oil
½cupTomato paste
½cupGreen pepper, diced
1cupMixed vegetables *
½tablespoonSweet basil
Salt & pepper to taste
½cupMacaroni
½cupPot barley
2cupsChicken, beef,ham (leftovers
2cupsCoarsely chopped cabbage
1Tomato, chopped

Directions

In a soup pot saute the celery, onion and garlic in oil for 5 minutes. Add water, vegetables, pot barley, meats, seasonings. Bring to the boil and simmer for 1¼ hours. For last ¼ hour add cabbage and macaroni. * Soup mix
