Ingredients

| 2 | mediums | Potatoes; unpeeled and cut in 1/2\" cubes |
| 1 | large | Onion; chopped |
| 1 | tablespoon | Oil |
| 1 | Green pepper; chopped | |
| 1 | Zucchini; chopped | |
| 1 | large | Tomato; cut in eighths |
| 2 | cans | Hormel Chunk Ham; 5 oz size, drained and flaked |
| ½ | cup | Cheddar cheese; grated |
Directions
In 10" skillet over med-high heat cook potatoes and onions 5 minutes or until brown and almost tender. Add green pepper and zucchini. Cook 5 minutes or until crisp and tender. Add tomato and ham.
