Halloumi and tomato in pitta bread

Yield: 4 servings

Measure Ingredient
4 \N Pitta breads; split
350 grams Halloumi cheese; sliced (12 oz)
4 mediums Tomatoes; sliced
100 grams Crispheart lettuce; (4oz)
1½ \N Cucumber; sliced lengthways,
\N \N ; very thinly

Preheat the grill until hot.

Grill the halloumi for 3-4 minutes, turning half way through until golden brown. Grill the pitta bread until warm. Spill the pitta in half widthways then layer on the lettuce, halloumi and tomato. Sprinkle with a pinch of salt - not too much as halloumi is very salty. Close the lid of pitta and cut in half or thirds.

Serve with crisps, a little lettuce and a few black olives.
