Halibut with dried-pineapple salsa

Ingredients

| ½ | cup | Diced dried pineapple |
| ½ | cup | Diced red bell pepper |
| ¼ | cup | Chopped fresh cilantro |
| 2 | teaspoons | Minced jalapeno pepper |
| ⅛ | teaspoon | Salt |
| ¼ | cup | Fresh lime juice |
| 1 | teaspoon | Vegetable oil |
| 4 | Halibut steaks, (4-ounce) | |
| (1 inch thick) | ||
| 1 | teaspoon | Vegetable oil |
| ⅛ | teaspoon | Salt |
| Vegetable cooking spray | ||
| Lime wedges, (optional) | ||
Directions
Combine first 7 ingredients in a bowl, and stir well. Let stand at least 15 minutes, stirring occasionally. Brush fish with 1 teaspoon oil, and sprinkle with ⅛ teaspoon salt. Set aside.
Prepare grill.
Place fish on grill rack coated with cooking spray, and cook 5 minutes on each side or until fish flakes easily with a fork. Yield: 4 servings (serving size: 3 ounces fish and ¼ cup salsa).
NOTES : Serve fish with pineapple salsa and lime wedges, if desired.
