Green garlic soup

Yield: 1 Servings

Measure Ingredient
2 ounces Butter
4 bunches Green garlic, cleaned and roughly chopped
3 Potatoes, peeled and quartered
6 cups Chicken stock
Salt and white pepper to taste
1 cup Heavy cream

Here are two garlic soup recipes from The Stinking Cookbook In a large pot, melt the butter and saute the green garlic. Add the potatoes and chicken stock. Cover and bring to a simmer. Cook for 30 minutes Puree he soup in a blender or food processor and pass through a fine strainer. Season with salt and pepper; add cream. Serve with garlic croutons.
