Green beans with double sesame dressing

Ingredients

1poundsGreen beans, trimmed
2tablespoonsSherry vinegar
2tablespoonsSoy sauce
tablespoonPeanut oil
½tablespoonOriental sesame oil
1tablespoonGround roasted sesame seeds (see page 40)
¼teaspoonPepper

Directions

DRESSING

1. To prepare dressing, combine the vinegar, soy sauce, peanut oil, sesame oil, sesame seeds, and pepper. Whisk or shake in a tightly covered jar until blended.

Can be prepared several hours in advance.

2. Steam the beans for 3-4 minutes, then plunge them in ice water.

DRain well.

3. Put the beans in a serving bowl, then toss with as mush of the dressing as you need to coat the beans. SErve.

Can be prepared up to 3 hours ahead.
