Green bean-potato curry

Yield: 4 servings

Measure Ingredient
4 mediums Potatoes; peeled and cut into
; 1/2-inch cubes
1½ cup Green beans; cut in 1/2 inch
; pieces
Basic Curry Mix for Four
3 tablespoons Vegetable oil or ghee
3 tablespoons Yogurt; (optional)

1. In a large pot with steamer, steam potatoes for about five minutes. Add beans and steam for about 10 minutes more, until potatoes and beans are very tender 2. Brown spices in vegetable oil or ghee, following instructions In Basic Curry Mix. Add to steamed vegetables just before serving, along with yogurt, if desired. Toss well.
