Greek fried cheese

Ingredients

| 1 | pounds | Kafalotyri or Casseri cheese |
| Cut in 4 oz. slices | ||
| Ice water with cubes | ||
| ½ | cup | Flour |
| ¼ | pounds | Butter |
| 2 | Lemons cut in half | |
| Cognac | ||
Directions
Put cheese in bowl. Cover with water & cubes, & refrigerate 1 hour or until very cold. Keep cold until frying. Remove 1 slice at a time, pat dry. Flour both sides & shake excess. Add immediately to skillet with 2-3 Tbls. sizzling butter, & fry quick. Sprinkle with lemon juice & a few drops of cognac. Ignite & serve as soon as flame dies.
