Gratin of summer berries

100gramsSelection of Berries
1Vanilla Pod
50millilitresCream
50gramsSugar
150millilitresBoiling Water
25millilitresSweet Wine
1Lemon; (juice)

Directions

1. Whisk the egg yolk over a bain marie using the boiling water, until it doubles in volume and is thick and creamy.

2. Fold in the remainder of the ingredients.

3. Glaze under a hot salamander / grill.

4. Serve with sorbet, ice cream or creme fraiche.
