50 millilitres | Groundnut oil |
2 teaspoons | Garam masala |
2 teaspoons | Ground coriander |
1 teaspoon | Ground cumin |
100 millilitres | Coconut milk |
100 millilitres | Double cream |
1 teaspoon | Salt |
2 \N | Fresh red chillies |
1 teaspoon | Turmeric |
2 \N | Cm root ginger; grated |
2 \N | Cloves garlic; crushed |
100 millilitres | Water |
Shallow fry the panir. Add the salt, garam masala, coriander, cumin, turmeric, ginger, chillies and garlic and saut lightly.
Add the water and bring to the boil. Add the peas and mushrooms and simmer for 10 minutes. Add the spinach, coconut milk and cream and simmer for 5 minutes.
Serve with rice.
