Goan creamy curry

50millilitresGroundnut oil

2teaspoonsGround coriander
1teaspoonGround cumin
100millilitresCoconut milk
100millilitresDouble cream
1teaspoonSalt
2Fresh red chillies
1teaspoonTurmeric
2Cm root ginger; grated
2Cloves garlic; crushed
100millilitresWater

Directions

Shallow fry the panir. Add the salt, garam masala, coriander, cumin, turmeric, ginger, chillies and garlic and saut‚ lightly.

Add the water and bring to the boil. Add the peas and mushrooms and simmer for 10 minutes. Add the spinach, coconut milk and cream and simmer for 5 minutes.

Serve with rice.
