Goan creamy curry

Measure Ingredient
500 grams Panir cheese; cubed
200 grams Mushrooms
200 grams Peas
100 grams Spinach
50 millilitres Groundnut oil
2 teaspoons Garam masala
2 teaspoons Ground coriander
1 teaspoon Ground cumin
100 millilitres Coconut milk
100 millilitres Double cream
1 teaspoon Salt
2 \N Fresh red chillies
1 teaspoon Turmeric
2 \N Cm root ginger; grated
2 \N Cloves garlic; crushed
100 millilitres Water

Shallow fry the panir. Add the salt, garam masala, coriander, cumin, turmeric, ginger, chillies and garlic and saut‚ lightly.

Add the water and bring to the boil. Add the peas and mushrooms and simmer for 10 minutes. Add the spinach, coconut milk and cream and simmer for 5 minutes.

Serve with rice.
