Gipsy veal saute

Yield: 2 servings

Measure Ingredient
½ pounds Veal scallops
2 tablespoons Butter
1 cup Sliced mushrooms
½ cup Sliced scallions; incl tops
2 tablespoons Dry vermouth; OR
2 tablespoons Chicken broth
⅓ cup Heavy cream
1½ tablespoon Sun-dried tomato paste

Saute veal in butter until lightly browned. Remove from pan. Add scallions & mushrooms. Saute lightly. Add vermouth or chicken broth & bring to a boil. Add cream & tomato paste. Cook 2 mins.
