Gipsy veal saute

Ingredients

| ½ | pounds | Veal scallops |
| 2 | tablespoons | Butter |
| 1 | cup | Sliced mushrooms |
| ½ | cup | Sliced scallions; incl tops |
| 2 | tablespoons | Dry vermouth; OR |
| 2 | tablespoons | Chicken broth |
| ⅓ | cup | Heavy cream |
| 1½ | tablespoon | Sun-dried tomato paste |
Directions
Saute veal in butter until lightly browned. Remove from pan. Add scallions & mushrooms. Saute lightly. Add vermouth or chicken broth & bring to a boil. Add cream & tomato paste. Cook 2 mins.
