Ginger orange squash

3cupsFrozen cubed squash
2tablespoonsOrange juice
¼teaspoonEach salt and ginger
2tablespoonsButter
1teaspoonGrated orange rind
pinchEach nutmeg and pepper.

Directions

In suacepan, bring small amount of water to boil; add squash. Reduce heat to simmer and cook for 6 minutes or until tender; drain. Mash squash; beat in butter, orange juice and rind, salt, ginger, nutmeg and pepper. Makes 4 servings.
