Ginger orange squash

3 | cups | Frozen cubed squash |
2 | tablespoons | Orange juice |
¼ | teaspoon | Each salt and ginger |
2 | tablespoons | Butter |
1 | teaspoon | Grated orange rind |
pinch | Each nutmeg and pepper. |
In suacepan, bring small amount of water to boil; add squash. Reduce heat to simmer and cook for 6 minutes or until tender; drain. Mash squash; beat in butter, orange juice and rind, salt, ginger, nutmeg and pepper. Makes 4 servings.
