Ghanaian groundnut soup

6 | ounces | Tomato paste (can) |

1 | large | Onion [cut up] |
3 | quarts | Water |
1 | tablespoon | Cornstarch (or more) |
IF NECESSARY
This is a copy of an old Ghanian [from Ghana] recipe a friend gave my mother about 30 years ago. Kinda interesting. It's authentic, but I think the real thing needs some serious hot sauce added.
Combine ingredients in large pot or pressure cooker. Cook until meat is tender. If using pressure cooker, I cook it at 15 pounds pressure for ½ hour. Scrape oil from top. Add corn starch if the gravy is too thin. Serve over rice.
Beef or pork maybe substituted for the chicken, and if your family enjoys fish, a quick way is to cook the ingredients (except meat) until the onion is tender and add a large can of tuna or other fish.
For variety, you might like to substitute rat, lizard, or lion meat!! ~Ruth Cuthbertson
