Gemelli with ricotta and spinach

Ingredients

| 16 | ounces | Gemelli |
| 1 | tablespoon | Olive oil |
| 2 | Cloves garlic; crushed | |
| 20 | ounces | Chopped spinach |
| 1 | Carton; (15 oz) skim ricotta cheese | |
| ⅓ | cup | Grated Parmesan cheese |
| ¼ | tablespoon | Coarse ground pepper |
Directions
Prepare pasta in boiling salted water. Meanwhile,heat oil in a skillet over medium heat until hot. Add garlic ,stirring for 1 minute. Gradually add spinach and 2 tablespoons of water;cook,stiring often,just until spinach wilts. Remove skillet from heat. When pasta is done, remove 1 cup of pasta cooking liquid, drain pasta ,return to pot. Add ricotta cheese, parmesan cheese, pepper,½ tsp salt,spinach mixture and reserved cooking water.
