Ingredients

| 1 | cup | Cooked and chopped spinach; with excess water squeezed out |
| 1 | small | Onion; minced |
| 2 | tablespoons | Sweet butter |
| 1 | cup | Heavy cream |
| 1 | pounds | Ricotta |
| 1 | pounds | Pasta; (shells, bows etc. cooked according to package directions) |
| ½ | cup | Freshly grated Parmesan cheese |
Directions
In a saucepan saute the minced onion in butter.
Add the cooked spinach, heavy cream and ricotta. Stir and cook for about 3 minutes.
Combine cooked and drained pasta with spinach/cheese mixture and toss with Parmesan cheese. Serve immediately.
