Pasta con spinaci e ricotta (pasta with spinach and ricotta

Quantity Ingredient
1 cup Cooked and chopped spinach; with excess water squeezed out
1 small Onion; minced
2 tablespoons Sweet butter
1 cup Heavy cream
1 pounds Ricotta
1 pounds Pasta; (shells, bows etc. cooked according to package directions)
½ cup Freshly grated Parmesan cheese



In a saucepan saute the minced onion in butter.

Add the cooked spinach, heavy cream and ricotta. Stir and cook for about 3 minutes.

Combine cooked and drained pasta with spinach/cheese mixture and toss with Parmesan cheese. Serve immediately.

Serves 4
