1cupCooked and chopped spinach; with excess water squeezed out
1smallOnion; minced
2tablespoonsSweet butter
1cupHeavy cream
1poundsRicotta
1poundsPasta; (shells, bows etc. cooked according to package directions)
½cupFreshly grated Parmesan cheese

Directions



In a saucepan saute the minced onion in butter.

Add the cooked spinach, heavy cream and ricotta. Stir and cook for about 3 minutes.

Combine cooked and drained pasta with spinach/cheese mixture and toss with Parmesan cheese. Serve immediately.
