Garlic lentils

Yield: 4 servings

Measure Ingredient
1 tablespoon Dried minced garlic
2 teaspoons Dried minced onion
1 small Dried chili
1 \N Cinnamon stick
1 pounds Lentils
3 \N Cloves garlic -- minced
1 tablespoon Ginger root -- minced
¼ teaspoon Tumeric
¼ cup Olive oil
¼ cup Orange juice

Place the dried minced garlic, dried minced onion, dried chili and cinnamon stick in a large pot of water and bring to a boil.

Meanwhile, put the lentils in a large mixing bowl and wash in several changes of cold water. Drain and add to the boiling water. Simmer for 35 to 40 minutes or until the lentils are tender. Drain and remove the chili and cinnamon stick. Add the fresh garlic, gingerroot, tumeric, olive oil and orange juice and mix thoroughly.

Reserve 2 cups for Lentil Soup with Italian Sausage.
