Fried zucchini blossoms

Measure Ingredient
1 cup All-purpose flour
1 teaspoon Curry powder
¼ teaspoon Salt
1 cup Chilled club soda
¼ pounds Mozzarella cheese; coarsely grated
1 tablespoon Finely chop'd fresh cilantro
16 \N Zucchini blossoms; pistils removed if desired *
\N \N Canola oil for deep-frying

Mix together flour, curry powder, and salt. Add club soda; mix until smooth. Let batter stand 10 minutes.

In a small bowl toss mozzarella and cilantro. Stuff 1 tablespoon into each blossom, pressing ends of blossom closed.

Heat 1 inch oil in skillet (375ø F). Dip the filled blossoms one at a time in batter. Coat completely. Fry, turning once, until golden and crisp. Drain on paper towels; sprinkle with salt. Serve warm.
