Fried shrimp with pineapple

Ingredients

| 1 | cup | Sifted flour |
| 1 | teaspoon | Baking powder |
| 1 | teaspoon | Salt |
| 1 | Egg, beaten | |
| ½ | cup | Beer |
| Oil for frying | ||
| 1 | pounds | Shrimp, peeled and deveined |
| 1 | tablespoon | Cornstarch |
| 1 | tablespoon | Sugar |
| ¼ | cup | Vinegar |
| ½ | cup | Pineapple juice |
| 1 | cup | Pineapple chunks |
Directions
1) Sift flour, baking powder, and ½ ts salt together in a bowl.
Beat in egg and beer.
2) Heat oil to 375 degrees in deep skillet or deep fryer. Dip shrimp in batter, coating well. Fry shrimp, a few at a time, until golden brown. Drain on paper towels and keep warm.
3)In saucepan, combine cornstarch, sugar, ½ ts salt, and vinegar.
Add pineapple juice, cook over low heat, stirring constantly, until sauce thickens.
4) Arrange shrimp on serving platter. Place pineapple chunks around shrimp. Pour sauce on top; serve at once.
