Fried rice and cheese puffs (polpette di riso e formaggio)

2 cups Cooked rice
⅛ teaspoon Black pepper
¼ cup Parmesan cheese
1 tablespoon Soft butter
1 \N Egg, well beated
1 teaspoon Salt
1 pounds Mozzarella, cut into cubes
\N \N Bread crumbs
\N \N Oil (for frying)

Mix together rice, Parmesan cheese, and butter in bowl. Add egg, salt, and black pepper Blend. Add Mozzarella cubes Mix and shape into balls roll in bread crumbs fry in deep oil until golden brown Serve with meat or fish.

yield 6-8 puffs.
