6tablespoonsFinely diced fresh tomato
2tablespoonsRed wine vinegar
2teaspoonsMinced spanish onion
2tablespoonsFresh lime juice
2teaspoonsMinced flat-leaf parsley
1teaspoon(heaping) coarse salt
1Garlic clove; minced
¼cupWater
1tablespoonPickled jalapeƱo chile juice
2tablespoonsMinced fresh chives
1teaspoonFinely diced serrano chile
¼cupTiced canned green chiles
6tablespoonsFinely diced green bell pepper
¼teaspoonSugar
1pinchGround oregano
1pinchGround cumin

Directions

Combine all the ingredients in a ceramic or glass bowl. Mix well, cover, and refrigerate overnight. Serve at room temperature.
