Fresh black-eyed peas (microwave)

Yield: 4 servings

Measure Ingredient
4 cups Shelled fresh black-eyed peas
3 slices Bacon; chopped
1 cup Water
1 medium Onion; chopped
¾ teaspoon Salt
½ teaspoon Ground red pepper
1 each Bay leaf

Combine all ingredients in a 2-quart casserole; mixing well. Cover with heavy-duty plastic wrap. Microwave at HIGH for 4 minutes; stir well. Cover and microwave at MEDIUM for 20 to 25 minutes, stirring every 5 minutes. Let stand, covered, for 5 minutes. Discard bay leaf.

Yield: 4 servings
