Fish with onion & cumin sauce

Ingredients

| 4 | Sea bass or halibut fillets 6 oz. about 1\" thick | |
| ¼ | cup | Lemon juice |
| 1 | pounds | Tomatoes |
| 3 | tablespoons | Vegetable oil |
| 2 | larges | Onions, sliced 1/4\" thick |
| 4 | Garlic cloves, pressed | |
| 1½ | teaspoon | Cumin |
Directions
Place fish in a glass baking dish, pour lemon juice over. Season with salt & pepper. Chill while preparing the sauce.
Blanche the tomatoes in a pot of boiling water for 20 seconds. Peel the tomatoes and cut in half. Squeeze out the seeds and chop; set aside.
Heat oil in a large skillet over medium heat. Add onions, cover and cook until soft and golden-brown, stirring occasionally, about 20 minutes. Add garlic and saute 30 seconds. Mix in cumin, then tomates, simmer sauce about 5 minutes. Add fish and lemon juice, and simmer until fish is cooked through, about 10 minutes.
Remove fish with a slotted spatula to platter. Bring sauce to boil and cook until slightly thickened, about 5 minutes. Season with salt & pepper, spoon sauce over fish.
