Fish pinwheels

8 | Flounder fillets | |
8 | slices | Tomato |

Here's a recipe that sounds good for a Shavuos dish. I actually got this one as a submission for a Pesach cookbook that I'm compiling for my kids' school, but its a nice sounding dairy main dish! Source: Not Potatoes Again! (tentative title :-) Combine the spinach, eggs, matzo meal and season with salt and white pepper to taste. Spread the mixture over the fish fillets and roll up each fillet, jelly roll style.
Put the rolled up fish, seam down in a greased 9x13 pan and top each one with a tomato slice and a pat of butter. Bake at 325°F for 30 minutes.
