Fiorentina rub

Measure Ingredient
2 tablespoons Fresh rosemary leaves; chopped
2 tablespoons Fresh sage leaves; chopped
2 tablespoons Fresh thyme leaves; chopped
4 tablespoons Freshly ground black pepper
4 tablespoons Kosher salt
4 tablespoons Extra virgin olive oil

Pat meat dry. In a small bowl combine all spices until well mixed. Coat meat with rub. Brush meat with olive oil.
