Fig and honey pudding

Quantity Ingredient
250 grams Soft dried white figs; chopped
½ cup Caster sugar
125 grams Fresh white breadcrumbs
Finely grated zest of 1 orange
1 teaspoon Bi-carbonate of soda
1 teaspoon Cinnamon
½ teaspoon Nutmeg
2 Eggs; lightly beaten
60 grams Butter; melted
2 tablespoons Honey
1 tablespoon Rum or whiskey

1. Grease a pudding bowl with butter and place a circle of Glad Bake in the base of the bowl.

2. Place figs into a mixing bowl with the breadcrumbs and orange. Sift together the bi-carbonate of soda and spices and add to fig mixture and stir together. Add remaining ingredients and mix well.

3. Place mixture into prepared bowl and cover with a circle of Glad Bake and a circle of foil, secured with string. Place pudding into a large pot and pour in enough boiling water to come halfway up the sides of the bowl.

4. Place pot on heat and bring to the boil, then reduce heat to constant simmer for 2 hours, adding more boiling water if necessary. When ready to serve, remove pudding and discard paper and foil. Unmould onto a serving plate and accompany with custard.
