In the recipe for Fettucine with Shrimps and Scallion, omit the shrimps and substitute ½ ounces dried black Chinese mushrooms. When you begin preparation, cover the mushrooms generously with boiling water and leave them to soak. Chop the leaves of a small bunch of coriander.
When the flavoring vegetables have been chopped, drain the mushrooms and slice them. Follow the recipe as described, stir frying the mushrooms in place of the shrimps, and stirring in the chopped coriander at the end of cooking.
