Empanadas #1

Yield: 25 Servings

Measure Ingredient
3 \N Pie crust sticks (comes 2 to a box) or favorite pie crust recipe
1 pounds Ground beef
1 tablespoon Oil
1 medium Onion; finely chopped
1 \N Green pepper; finely chopped
1 teaspoon Capers
10 \N Stuffed green olives; chopped
1 large Ripe tomato; finely chopped
1 pinch Oregano
\N \N Salt to taste
\N \N Pepper to taste
\N \N Hot sauce #3 (see recipe)

Make pie crust dough according to directions on package and chill while preparing meat mixture. Brown meat in oil. Add the other ingredients (except hot sauce) and simmer for ½ hour. Roll out dough ⅛ inch thick on a slightly floured board and cut with round cookie cutter. On each round of dough, put ½ teaspoon of filling. Fold over and flute edges with a damp fork. Fry in hot grease until golden brown. Drain and serve hot with Hot Sauce.

Well worth the effort! May be made and then frozen.
