Eggplant filling #2

Yield: 6 Servings

Measure Ingredient
8 \N Dried black mushrooms
½ pounds Lean pork
1 \N Scallion stalk
1 slice Fresh ginger root
2 tablespoons Soy sauce
1 tablespoon Sherry
½ teaspoon Salt
½ teaspoon Sugar

1. Soak dried mushrooms.

2. Mince or grind pork. Mince scallion, ginger and soaked mushrooms; combine with pork.

3. Blend in remaining ingredients. VARIATION: For the dried black mushrooms, substitute 10 water chestnuts.
