4 | cups | Milk (up to 5) |
½ | Stick of butter | |
Salt and black pepper to taste | ||
Finely chopped fresh hot peppers |
Directions
My Mom used to make the best "Egg Plant Stew" There are no exact ingredients but it goes something like this: Peel one large eggplant and chop to medium size chunks. Boil the chunks with seasoned water until very soft....drain. Put about 4-5 cups of milk on a medium low heat. Add half a stick of butter, salt and black pepper to taste. Add the eggplant. Add finely chopped fresh hot peppers from the garden (she always had cayenne). Don't let the milk boil, simmer until all ingredients have had a chance to blend.
