Egg and milk wash

Yield: 100 Servings

Measure Ingredient
1¼ cup WATER
2 EGGS SHELL
¾ ounce MILK; DRY NON-FAT L HEAT

YIELD: ABOUT 1½ CUPS

1. COMBINE MILK AND WATER; MIX UNTIL THOROUGHLY BLENDED.

2. ADD EGGS; WHIP UNTIL WELL BLENDED.

3. BRUSH ON PIES. ALLOW TO DRY BEFORE BAKING.

NOTE: 1. THIS WASH WILL COVER 13 TO 15 TWO-CRUST PIES (APPLE, BLUEBERRY, CHERRY, PEACH, AND PINEAPPLE) THAT ARE BAKED 30 TO 35 MINUTES. SEE RECIPE NO. I-G-2.

NOTE: 2. KEEP ALL WASHES REFRIGERATED UNTIL READY-TO-USE.
