| 1 | cup | Ham -- grind |
| 4 | slices | Bread |
| 4 | Eggs | |
| Black pepper -- to taste | ||
| 1 | teaspoon | Salt |
| Yellow mustard -- to taste | ||
Directions
Bread should be toasted on one side. Beat 3 egg whites until stiff.
Combine the Ground Ham with 1 beaten whole egg and 3 yolks. Add the salt, pepper and mustard to taste. If mixture is not sufficiently moist, add a bit of milk or mayonaise. Spread mixture on untoasted side of bread. Cover this smoothly with ½ inch thick coating of stiffly beaten egg whites.
Place in a preheated 350 degree oven and bake until egg white is delicatly brown. This is good as a brunch or breakfast dish. Good way to use leftover ham. From American Beginnings,The Delectable Past.
