Measure Ingredient
3 \N Eggs, separated
3 tablespoons Matzo meal
1 tablespoon Sugar
½ \N Lemon, rind, grated
5 tablespoons Nuts, ground--make each a heaping tablespoon.
\N \N Apricot jam

Make a snow with whites. Gradually add sugar. At slow speed beat yolks into whites. Slowly fold in dry ingredients. Fry tablespoon of mixture (to make latkehs) in hot oil; place ½ teaspoon jam onto each latkeh (almost in the middle), fold latkeh in half, and fry both sides of the half moon. Sprinkle with sugar if desired.
