Derby day cookies

Yield: 3 Dozen

Measure Ingredient
1 16 confectioners' sugar
1 cup Finely chopped pecans
½ cup Butter, room temperature
¼ cup Green creme de menthe
1 6 oz. pkg. semisweet choc. chips, melted

Mix confectioners' sugar, pecans, butter and creme de menthe in medium bowl until well blended. Cover and refrigerate until firm, about 30 minutes.

Line a large baking sheet with foil. Shape pecan mixture into 1¼ inch round balls and place on sheet. Refrigerate until firm, about 15 minutes. Dip half of each ball into melted chocolate; return to sheet. Refrigerate until set, about 1 hour. (Can be prepared ahead.
