Dee's black bean sauce

Ingredients

1Onion -- minced
1Leek -- minced
1Red bell pepper -- minced
2tablespoonsGinger -- pureed
2tablespoonsGarlic -- pureed
1Orange juice -- plus zest
2tablespoonsOil
4ouncesDry white wine
4ouncesHoisin sauce
1cupWater -- use more if needed
2tablespoonsLemon juice
2tablespoonsSoy sauce
Hot chili peppers -- flakes
2tablespoonsCilantro -- minced
2tablespoonsDried black beans --
Fermented
1tablespoonSesame oil

Directions

Saute the vegetables in the oil, then add the remaining ingredients except the fresh herbs and the sesame oil. Simmer until friendly, then stir in the herbs and sesame oil.
