Custardy chicken bake

Ingredients

| 6 | Chicken breast halves or thighs | |
| 2 | tablespoons | Vegetable oil |
| ½ | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| 1½ | cup | Bisquick baking mix |
| 1 | teaspoon | Dried tarragon leaves |
| ½ | teaspoon | Salt |
| 1½ | cup | Milk |
| 3 | Eggs | |
| Mushroom Sauce #2; see recipe | ||
Directions
Heat oven to 350 degrees.
Grease baking dish, 13x9x2 inches.
Heat oil in skillet.
Fry chicken until light golden brown.
Place chicken, skin side up, in dish.
Sprinkle with ½ Tsp. salt and the pepper.
Beat baking mix, tarragon, ½ Tsp. salt, the milk and eggs with hand beater until smooth.
Pour over chicken. Bake until golden brown, 55 to 60 minutes.
Serve with Mushroom Sauce #2.
Makes 4 to 6 servings.
