Curry powder (dry masala)

Ingredients

1teaspoonGround turmeric
½cupCoriander seeds
2teaspoonsAnise seeds
2teaspoonsCloves
2teaspoonsCumin seeds
2teaspoonsBlack peppercorns
2teaspoonsMustard seeds
2Dried hot red peppers or to taste

Directions

Grind all the ingredients together. Store in an airtight container at room temperature for up to 6 months.

Add 1 large onion, finely chopped, and 4 garlic cloves, chopped, to make curry paste.
