Cucumber sweet pickle (short process)

4 quarts

Ingredients

Quantity Ingredient
1 gallon Cucumbers
6 cups Sugar
1 cup Salt
1 cup Water
quart Vinegar
2 tablespoons Mixed spices

Directions

Wash cucumbers and wipe them dry. Dissolve salt in 1 gallon cold water and pour over cucumbers. Let stand 24 hours and drain. Puncture each cucumber 3 times with a needle. Combine ½ of the sugar, vinegar, water, and spices. Simmer liquid for 30 minutes. Add cucumbers to liquid and continue to simmer 15 minutes. Let stand in a jar for 2 days. Drain off the liquid and pack pickles in hot jars.

Add remaining sugar to liquid and boil for 5 minutes. Pour over pickles and seal.
