Crockpot minestrone

Ingredients

cupMinced ham or chicken
½cupChopped onion
½cupDiced carrots
½Box frozen spinach (I use it all, usually)
1largePotato, diced
1quartChicken broth (I use canned)
1can(16 oz) chick peas (garbanzos), drained
½cupDiced celery
1can(16 oz) domatoes, chopped with liquid
1tablespoonDry parsley
2teaspoonsSalt
1tablespoonOregano
1cupMacaroni shells, measured dry

Directions

Combine in crock pot and cook all day all except the macaroni. About 45 minutes before serving, add macaroni.

Sprinkle with mozarella cheese before serving.

***This is one of our favorite soups. It's thick, like a stew. You can use either fresh chicken or cooked chicken. It's better if fresh chicken is used. I usually chop up a couple of boneless/skinless pieces to use. You can also mix the chicken and ham if you wish.
