Crockpot minestrone

Yield: 1 Servings

Measure Ingredient
1½ cup Minced ham or chicken
½ cup Chopped onion
½ cup Diced carrots
½ \N Box frozen spinach (I use it all, usually)
1 large Potato, diced
1 quart Chicken broth (I use canned)
1 can (16 oz) chick peas (garbanzos), drained
½ cup Diced celery
1 can (16 oz) domatoes, chopped with liquid
1 tablespoon Dry parsley
2 teaspoons Salt
1 tablespoon Oregano
1 cup Macaroni shells, measured dry

Combine in crock pot and cook all day all except the macaroni. About 45 minutes before serving, add macaroni.

Sprinkle with mozarella cheese before serving.

***This is one of our favorite soups. It's thick, like a stew. You can use either fresh chicken or cooked chicken. It's better if fresh chicken is used. I usually chop up a couple of boneless/skinless pieces to use. You can also mix the chicken and ham if you wish.
