|1½ pounds||Lake trout fillet; cut|
|Into 4 portions|
|2 teaspoons||Butter; melted, divided|
|½ cup||Cornflake crumbs; crushed *|
|⅛ teaspoon||Lemon pepper|
|⅛ teaspoon||Garlic powder|
|⅛ teaspoon||Cayenne or|
|2 teaspoons||Chopped fresh parsley|
* Dry bread crumbs, cracker crumbs or Matzo crumbs are also good.
Preheat oven to 400 F. Crush bread crumbs or cornflakes and mix in lemon pepper, garlic powder, cayenne and parsley. With half the butter lightly grease a shallow baking pan. Rinse fish and pat dry. In small bowl, beat egg with a little water. Dip fish in the egg mixture, then roll in the seasoned crumbs. Arrange fish in the baking pan, then drizzle the remaining butter over all. Bake uncovered 20 min or until fish flakes easily.
