Creole tomatoes

6Med.size Creole tomatoes
½cupFine dry bread crumbs/flour
½teaspoonSalt
1dashPepper
Shortening

Directions

Cut tomatoes crosswise into ½" thick slices. Dip each slice in combined crumbs, salt and pepper. Fry in small amt. of shortening until brown on both sides.

Variation: Dip in cornmeal instead of crumbs or flour.
