| 6 | Med.size Creole tomatoes | |
| ½ | cup | Fine dry bread crumbs/flour |
| ½ | teaspoon | Salt |
| 1 | dash | Pepper |
| Shortening | ||
Directions
Cut tomatoes crosswise into ½" thick slices. Dip each slice in combined crumbs, salt and pepper. Fry in small amt. of shortening until brown on both sides.
Variation: Dip in cornmeal instead of crumbs or flour.
