Crawfish pasta

Ingredients

| 1 | pounds | Crawfish; tailmeat only |
| Vegetable cooking spray | ||
| 1 | Clove garlic; minced | |
| ½ | cup | Green onions; sliced |
| 1 | cup | Mushrooms; sliced |
| 3 | ounces | Parmesan cheese; grated |
| 5 | ounces | Evaporated skim milk |
| 8 | ounces | Pasta; any kind |
Directions
Spray non-stick skillet with cooking spray. Saute garlic, green onions and mushrooms until tender. Add crawfish tailmeat and cook for 5 minutes over low heat. Sprinkle with Parmesan cheese and evaporated milk. Simmer about 5 minutes. Add salt and pepper to taste. Serve over pasta.
