Crawfish pasta

Ingredients

QuantityIngredient
1poundsCrawfish; tailmeat only
Vegetable cooking spray
1Clove garlic; minced
½cupGreen onions; sliced
1cupMushrooms; sliced
3ouncesParmesan cheese; grated
5ouncesEvaporated skim milk
8ouncesPasta; any kind

Directions

Spray non-stick skillet with cooking spray. Saute garlic, green onions and mushrooms until tender. Add crawfish tailmeat and cook for 5 minutes over low heat. Sprinkle with Parmesan cheese and evaporated milk. Simmer about 5 minutes. Add salt and pepper to taste. Serve over pasta.
