Cracker 'n vegetable lasagna

Ingredients

1mediumRed Bell Pepper; cut in strips
1smallOnion; sliced
1smallZucchini; sliced
½teaspoonOregano Leaves
1tablespoonFleischman's Margarine
32Premium Saltine Crackers; any kind
4ouncesReduced Fat Cheddar Cheese; shredded
2cupsSkim Milk
1cupEgg BeatersĀ® 99% Egg Substitute

Directions

In large skillet, over medium heat, cook and stir red pepper, onion, zucchini and oregano in margarine until tender. In lightly greased 9 x 9 x 2-inch baking pan, layer half each of the crackers, vegetable mixture and cheese. Repeat layers, ending with cheese.

In bowl, beat milk and egg product; evenly pour over cheese layer. Bake at 350° for 30 to 35 minutes or until knife inserted in center comes out clean.
