Couscous salad - martha stewart living

Measure Ingredient
2 cups Water
1½ teaspoon Salt
2 cups Couscous
1 small Red onion, diced
2 smalls Cucumbers, peeled if waxy, seeded, and diced
2 eaches Ripe tomatoes, seeded and diced
¾ cup Currants (opt.)
½ cup Chopped flat-leaf parsley
Couscous Dressing (separate recipe)
1 each Bring water to a boil; stir in salt and couscous. Remove pan from


heat, cover, and let stand 5 minutes. Transfer couscous to a large bowl and break up any clumps. 2. Toss couscous with remaining ingredients. Add dressing and mix well.
