Coronation chicken

| 1½ | pounds | Cooked chicken, skinned |
| 1 | tablespoon | Vegetable oil |
| 1 | Onion, chopped | |
| 2 | teaspoons | Strong curry paste |
| 2 | teaspoons | Tomato puree |
| 75 | millilitres | White wine or chicken stock |
| Juice of 1/2 lemon | ||
| 8 | ounces | Can pineapple pieces,drained |
| 3 | tablespoons | Greek yoghurt |
| 225 | millilitres | Mayonnaise |
| 3 | ounces | Seedless grapes, halved |
Directions
Cut chicken into thin strips. Heat oil in small saucepan and saute onion for 3 mins or until soft. Add curry paste, tomato puree, stock or wine, and lemon juice. Simmer for 5 mins. Leave to cool. Puree half the pineapple in blender, strain off excess juice. In a large mixing bowl, mix together the yoghurt, mayonnnaise, pureed pineapple and curried onion sauce. Stir in chicken, grapes and remaining pineapple. Serve with rice salad and tortilla chips.
