Coronation chicken

2teaspoonsTomato puree
75millilitresWhite wine or chicken stock
Juice of 1/2 lemon
8ouncesCan pineapple pieces,drained
3tablespoonsGreek yoghurt
225millilitresMayonnaise
3ouncesSeedless grapes, halved

Directions

Cut chicken into thin strips. Heat oil in small saucepan and saute onion for 3 mins or until soft. Add curry paste, tomato puree, stock or wine, and lemon juice. Simmer for 5 mins. Leave to cool. Puree half the pineapple in blender, strain off excess juice. In a large mixing bowl, mix together the yoghurt, mayonnnaise, pureed pineapple and curried onion sauce. Stir in chicken, grapes and remaining pineapple. Serve with rice salad and tortilla chips.
